Hey, that’s Matzo Pizza!

It turns out that Matzos are the perfect foil for layering cheese and other toppings on. Also known as pizza, layering cheese with toppings on any crust-like object is sure to produce endorphin-like releases. I had a leftover half box of matzos from when I made Matzo Chocolate Almond Buttercrunch for Passover. Using Matzos as a base for pizza works really well although I wouldn’t load it up too much or the Matzos could get soggy-a pizza sin. I made some kale chips to go alongside the pizza and plunked this board down on the coffee table. We ate directly from it and best of all, no dishes! I’ll stock up on these to have on hand for a quick, easy and fairly healthy dinner. -bvox

Bon’s Matzo Pizza
4 sheets of matzo
Tomato sauce (I mashed some roasted tomatoes with some olive oil)
Veggie or meat pepperoni (I used veg, natch)
Chopped black olives
1 1/2 cups shredded mozzarella, cheddar cheese
Roasted grape tomatoes
Fresh oregano and rosemary, chopped fine
Red chili flakes

Preheat oven to 400 F. Place matzos on a baking sheet and spread a thin layer of tomato sauce on top. Layer the remaining ingredients on top, ending with cheese and herbs. Bake until cheese melts and bubbles. Cut into big chunks and dig in.
