Taco night. Muy bueno!

Another easy weeknight meal courtesy of Sig. We love taco night and in our early days together, the components of taco night used to come out of a bright yellow Old El Paso box. Then we found a recipe for a homemade seasoning and Tres Marias opened in our neighbourhood, providing us yummy tortillas. We haven’t looked back. We use the seasoning on ground beef but it could easily be used on any type of sautéed meat or veggies and I would try it with meatless ground round if I was entertaining my beloved members of the vegetarian/pescatarian sisterhood of which I was briefly a member of. -Steph McVox

Taco Seasoning
1 Tablespoon chili powder
2 teaspoon onion powder
1 teaspoon garlic powder (or a minced clove of garlic)
1 teaspoon ground oregano
1 teaspoon sugar
¾ teaspoon salt
½ teaspoon. paprika
½ teaspoon ground cumin

Mix all ingredients together. Makes 3 tablespoons seasoning mix. Equivalent to a 1¼ oz package of commercial taco seasoning.

Soft Tacos
1 pound of ground meat or “meat”
3 Tablespoons of taco seasoning mix
1 cup water
Grated cheese
Shredded lettuce
Chopped tomatoes, onions, avocado
Salsa and sour cream
Tortillas (flour or corn)
Lots of napkins

On medium heat, brown the meat. Drain the grease if there is any and add the taco seasoning. Stir throughout and combine well. Add 1 cup of water and simmer until the liquid has evaporated. Meanwhile, grate and chop your taco fillings. You could even make fresh salsa at this time, especially if you have a sous chef. Layer your fillings in the tortilla and grab a napkin because no matter how you fold or wrap your tacos, you’ll lose part of the fillings and they are drippy. Leftover taco meat is great in chili!

    Yummy! I’m so glad you posted the taco seasoning recipe so it’s handy to use. I’m going to get me some of those tortillas – they look so fresh and yummy!
