Red Wine Berry Compote

I needed something berrylicious to pair with my Lemon Buttermilk Bundt Cake so I decided to make berry compote, which is basically berries stewed in yummy syrup. Lemon and berries love each other and this berry compote fit the bill. The red wine and vanilla give the compote a rich luscious flavour and it’s equally good served warm or chilled. The leftover liquid in the compote makes a tasty drink when mixed with or without vodka and club soda. -Steph McVox

Red Wine Berry Compote
1 cup mixed berries, fresh or frozen (your choice of strawberries, blueberries, raspberries)
1 cup dried or frozen, pitted cherries or fresh if in season
¼ cup sugar
1 cup red wine
1 vanilla bean, split and scraped or 2 teaspoon vanilla extract.

Stir berries, cherries, sugar, vanilla bean/seeds or extract and wine in large saucepan over medium heat for 2 minutes. Simmer until reduced, about 5 minutes. Remove the vanilla bean before serving. You can make this the day before and store in a glass container in the refrigerator.
