Kale, Apple and Fennel Slaw

Kale, apple and fennel slawKale, apple and fennel really like each other and this is one of my new favourite combinations. The sweet-tart apple and the licorice flavour of the fennel are melded together with this bright and light granny smith apple cider vinaigrette. And it’s pretty. Once you make the vinaigrette, this healthy salad is ready in a heartbeat. The slaw’s crunch holds up well to eat again for lunch the next day. ’nuff said. -bvox

Kale, Apple and Fennel Slaw

  • 1 bunch kale, stem removed, sliced thinly
  • 2 apples, core removed, sliced thinly (toss with a few squirts of lemon juice)
  • 1 fennel bulb, thinly sliced prepping kennel
  • 1/4 cup Granny Smith Apple Cider Vinaigrette (recipe follows)

Assembly tip: slice kale, apple and fennel in advance and place in a bowl covered with plastic wrap. When ready to serve, toss in the vinaigrette. It will stay nice and crunchy. If you have spiced pecans or fresh pomegranate seeds on hand, I would toss a few of those in too.

Granny Smith Apple Cider Vinaigrette

  • 1 chopped Granny Smith apple (with core and peel)
  • 1/4 cup raw unfiltered apple cider vinegar
  • 1 tablespoon fresh lime juice
  • 1 tablespoon minced shallot
  • 1 teaspoon raw sugar
  • 1/4 cup plus 1 tablespoon safflower or grapeseed oil
  • kosher salt
  • freshly ground black pepper

Purée 1 chopped Granny Smith apple (with core and peel), 1/4 cup raw unfiltered apple cider vinegar, and 1 tablespoon fresh lime juice in a blender, occasionally scraping down sides of blender with a spatula, until smooth. Strain mixture through a finemesh sieve into a medium bowl, pressing down on solids with spatula to extract all juice; discard solids. Whisk in 1 tablespoon minced shallot and 1 teaspoon raw sugar. Whisk in 1/4 cup plus 1 tablespoon safflower or grapeseed oil until well blended. Season with kosher salt and freshly ground black pepper. You can make the dressing in advance, just give it a whisk or a shake before adding it to the slaw.
