Caprese Salad with Basil Pesto Dressing

Caprese salad with pestoFresh tomatoes, fresh basil, fresh mozzarella, fresh greens, fresh pesto, freshly ground pepper. That’s a lot of fresh! This Caprese salad isn’t just fresh; it’s bursting with ripe flavour. I can’t resist a Caprese salad. It has wow factor with its pretty concentric circles of colourful circles. I like them dressed simply with oil and balsamic vinegar, but I dressed this one with basil pesto sauce to kick it up a notch. You can use store bought pesto but if you want to make your own, here’s a recipe for homemade pesto sauce. -bvox

Caprese Salad with Basil Pesto Dressing

  • Fresh salad greens
  • 1 cup lightly packed fresh basil leaves
  • Fresh mozzarella cheese
  • 4 ripe tomatoes
  • Pinch each sea salt and freshly ground pepper
  • 1/4 cup pesto sauce (can be thinned with a bit of lemon juice and olive oil)

Slice mozzarella and tomatoes into 1/4-inch thick slices. On a platter, alternately layer cheese, tomatoes and basil in concentric circles over fresh greens. (Make-ahead: Cover and refrigerate for up to 4 hours.)

When ready to serve, drizzle the dressing over salad and finish with salt and pepper.
