Fresh Pea Guacamole

Fresh Pea GuacamoleGuacamole is an easy snack that I often make but thought I would add some crunch to it this time. I added fresh peas from the Kingsland Farmer’s Market and I raided the early bits of my garden and added shallots, a jalapeño pepper and chives. Then I saw some salted pepitas in my cupboard and thought why not?…in went those as well. The final result was kind of a sweet and crunchy guacamole in various shades of green. -StephMcVox

Fresh Pea Guacamole

  • 1 large ripe avocado, mashed
  • ½ cup fresh peas, chopped coarsely (leave a few hole to garnish the top with)
  • 1 small jalapeño, minced (with seeds and ribs removed unless you like it spicy, then add those too)
  • 2 tablespoons chives, chopped fine
  • Approximately juice of 1 lime
  • 3/4 teaspoon flaky sea salt, more as needed
  • 2 shallots, minced
  • 1 tablespoon toasted pepitas (shelled pumpkin seeds)
  • Fresh ground pepper to taste

In a medium bowl, combine mashed avocado, peas, jalapeño, chives, lime juice, 1/2 teaspoon sea salt and the shallots. Garnish with a few fresh whole peas, pepitas, remaining sea salt and fresh ground pepper. Grab some tortilla chips and dig in.
