Quinoa Patties with Lemon Yogurt Sauce

Quinoa PattiesI love love love these little savoury quinoa patties. If you’re making quinoa salad, cook a little extra quinoa – or better yet – form your leftover salad into patties with a little help from breadcrumbs and eggs. What I love most is you can switch it up and use what you have on hand. These ones have spinach and parmesan cheese, but I’ve also made them with shredded zucchini and feta cheese. I can’t get enough of them! That they are healthy is another perk. The lemon yogurt sauce adds a tangy bite. -bvox

Quinoa Patties with Lemon Yogurt Sauce

  • 1 yellow or white onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon red chili flakes
  • 2 1/2 cups cooked quinoa, at room temperature
  • 4 large eggs, beaten
  • 1/2 teaspoon fine-grain sea salt
  • 1/2 teaspoon fresh ground pepper
  • 1/4 cup finely chopped fresh chives
  • 1 cup chopped spinach
  • 1/3 cup freshly grated Parmesan
  • 1 cup bread crumbs (I used panko)
  • 2-3 tablespoons extra-virgin olive oil

Heat 1 tablespoon of oil in a large skillet over medium heat. Cook the onion, garlic and chili flakes until translucent. Combine the quinoa, eggs, and salt and pepper in a medium bowl. Stir in the chives, spinach, cheese and bread crumbs. Let sit for a few minutes so the crumbs can absorb some of the moisture. At this point, you should have a mixture you can easily form into sixteen 1/2 inch thick patties.

Heat remaining oil in the skillet over medium-low heat. Add 6 patties, if they’ll fit with some room between each, cover, and cook for 7 to 10 minutes, until the bottoms are deeply browned. Turn up the heat if there is no browning after 10 minutes and continue to cook until the patties are browned. Carefully flip the patties with a spatula and cook the second sides for 7 minutes, or until golden. Remove from the skillet and cool on a wire rack while you cook the remaining patties. You can also make the mixture a day in advance and cook them to order. They reheat nicely.

Lemon Yogurt Sauce
Combine 1/2 cup yogurt, 1/4 cup of mayo and juice of one lemon in a bowl. That is all.

    I want to try these. Trying for a gluten free diet so will have to see what I can substitute the bread crumbs for. Can’t wait to try them!
