Feta and Olives with Herbs

I could exist just on cheese, crackers, bread, olives, nuts, chutneys and pickles during the Christmas season. This simple appetizer of cubed feta and olives is the perfect dish to take to a party and nestle beside the cheese plate. It’s delicious and it checks a lot of boxes. Vegetarian, check. Gluten free, check. Quick and easy, check. Transportable, check. Feta and Olives with Herbs

  • Feta cheese, cubed
  • Olives (black or green)
  • Olive oil
  • White wine vinegar
  • Lemon juice, and zest
  • Fresh herbs, such as rosemary, thyme, dill, oregano, chives, chopped
  • Red pepper flakes
  • Fresh ground pepper
  • Fennel seeds

Toss all ingredients together and adjust seasoning to taste. If you’re in a pinch, dried herbs will work too. But they’re not as good, IMBO!
