Back in the day there was a time when I would scarf down chicken wings. I know! That ended over 20 years ago but the tempting smell of the hot sauce still lingers. Enter these cauliflower buffalo bites. My hubby regularly eats wings and I will usually nibble on the side of celery sticks and blue cheese dip that typically accompanies them. Before when I craved the hot sauce flavour and needed a fix, I added Frank’s Hot Sauce to my buttery popcorn. Until I heard about this recipe where the cauliflower is battered, baked, drenched in hot sauce and baked some more. Delicious, easy, spicy and indulgent. It made for good Oscar night snacks recently, along with Parmesan black pepper popcorn. -bvox
Spicy Cauliflower Buffalo Bites

1 cup water
1 cup all purpose flour
1 tsp garlic powder
1 tsp salt
6 1/2 cups cauliflower florets (1 large cauliflower)
3/4 cup Frank’s Hot Sauce
1 tbsp melted unsalted butter
Preheat the oven to 450°F. Lightly spray a large non-stick baking sheet with oil or line with parchment paper.
Combine the water, flour, garlic powder and salt in a large bowl and whisk until the batter is smooth.
Coat the cauliflower pieces with the batter and place on the baking sheet; bake for 20 minutes.
While the cauliflower is baking, combine the hot sauce and butter in a small bowl.
Pour the hot sauce mixture over the baked cauliflower and use a silicone brush to make sure it’s evenly coated. Continue baking for an additional 5 mins.
