This spicy jam topped appetizer was introduced to me by Lorena, our friend from Oaxaca. She was visiting Vancouver a couple of summers ago with her husband Sal and family and we got together with them and our friends often. Most occasions involved massive amounts of food and happy memories. One evening Lorena slipped out to get all of the ingredients for this addictive appetizer. Then she proceeded to whip it up and we devoured it. I’ve made it a few times since and it’s always a big hit. It’s quick and easy to put together and the taste is a delicious combination of sweet, spicy and salty. The salt come from the Ritz crackers, which Lorena insists is a must. I agree! -bvox
Cream Cheese with Apricot Chipotle Spread
1 tub or brick of cream cheese
1/2 cup apricot jam
1 canned chipotle pepper in adobo sauce, finely chopped
Spread cream cheese onto bottom of a dish or place the block on a plate. Mix jam (melted in microwave) and peppers together well, using a hand blender. Alternately you can cook it in a sauce pan to break it down.
Spread or pour over cream cheese. Serve with Ritz crackers and make sure you get a good bit of everything on your cracker.
